VANILIN – E107 :
Vanilla is obtained from a special bean (legume), but vanilin, which is the main flavor component of vanilla, is much cheaper to produce. Ethyl vanillin is the derivative that gives the closest flavor to real vanilla. It is fine crystalline powder in white or off-white color with a peculiar odor.
